Caroline Manzo: Queen of the Meatballs

Queen of the Meatballs - Rocco's Dinner Party - Caroline Manzo shares that her meatballs have won competitions and Rocco DiSpirito suggests she and his mom be put in a room to fight it out.

Rachel Ray had a "meatball throwdown" with The Real Housewives of New Jersey's Caroline Manzo and Teresa Giudice in a "Rival-Ray" challenge to see who makes the better meatballs!

"When people taste my meatballs, it's a little bit of heaven," proclaims Caroline, who says that the taste of her Mama Manzo's Miraculous Meatballs can stand on its own. "Teresa has to disguise her meatballs in her gravy," she says. "Not me - I'm commando. My meatballs are gonna kick your meatballs' butt!" "Who eats a meatball without sauce?" wonders Teresa. "It doesn't exist!" This fiery housewife named her Joe's Juicy Meatballs after her husband Joe ("he's absolutely juicy and delicious"), and claims that her recipe is the best because it's made by a true Italian. "Caroline, she's as Italian as the Olive Garden!" The cast of Jersey Boys were brought in as judges.

Mama Manzo's Miraculous Meatballs

  • 9 slices white bread, divided
  • 1 1/2 pounds meatloaf mixture (a combination of ground beef, pork and veal)
  • 1 egg
  • 1 cup milk
  • Salt and pepper
  • A large handful Locatelli grated cheese
  • 6 to 8 large cloves of garlic, ground fine in a food processor
  • Vegetable Oil, for shallow frying

Yields: Serves 6

Preparation

Pulse 6 slices of white bread in a food processor to make homemade breadcrumbs. Combine homemade breadcrumbs with meat, egg, milk, salt and pepper in a large bowl.

Cut crusts off remaining 3 slices of bread. Break the pieces up with your hands and combine with meat mixture. The mixture should be very loose.

Using 2 soup spoons, form the meat into balls and fry the balls in oil until brown.




 Joe's Juicy Meatballs

Ingredients

  • For the meatballs:
  • 1 pound high-quality, grass-fed ground beef with 85% fat content
  • 2 garlic cloves, chopped
  • 3 tablespoons fresh parsley, chopped
  • 6 tablespoons Pecorino Romano cheese, finely grated
  • 1 egg
  • 1/2 cup 2% milk
  • 1/2 cup seasoned breadcrumbs
  • For the sauce:
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/2 small onion, chopped
  • 1 dried red pepper
  • 1 28-ounce can Redpack Crushed Tomatoes in Thick Puree
  • 3 tablespoons fresh parsley, chopped
  • 1/4 teaspoon salt 
Yields: Serves 6

Preparation

Preheat oven to 400°F.
Prepare the meatballs: Put all ingredients into a large mixing bowl. Knead everything together with clean hands. You want to feel for the right texture -- It should be soft, but not sopping wet. If it's not soft enough, add 1 more tablespoon of milk.

Once all ingredients are combined, form balls the size of an egg by pushing them into the shape softly in your hands. Do NOT roll the meat into balls on your palms! Baby the meat, form it lovingly into the balls.

Place meatballs on a nonstick baking sheet. Bake for 30 minutes, remove and reserve.
Prepare the sauce: Heat oil in a large saucepan over medium heat. Add the garlic and onion, and sprinkle the salt over them to bring out their flavor. Break pepper in half to release the seeds and add it to the pot. Cook, stirring occasionally, until the onion is translucent, about 5 minutes.

Add the can of crushed tomatoes. Bring to a boil. Add parsley. Reduce the heat to medium-low. Simmer, stirring occasionally, for 5 minutes.

Carefully add the meatballs to the pan. Simmer, stirring occasionally, for 30 minutes.
Serve meatballs and sauce over spaghetti.

Fans continue to connect with their favorite shows and Bravolebrities beyond the television screen as Bravo Digital posted a strong eight percent growth garnering over 3.8 million unique visitors a month in the second quarter. Bravo Mobile delivered its best quarter ever in page views and video streams, up seven percent and 540 percent, respectively compared to Q2 2010. Bravo Mobile also delivered its best June ever in unique visitors and streams.

Bravo earned its highest rated Monday night (8-11pm) in network history among all key demos on May 16 driven by "The Real Housewives of New Jersey" which delivered the highest rated season premiere in the network's history with 2.5 million adults 18-49 and the highest rated season premiere in the Housewives franchise with 3.5 million total viewers. On pace to record its highest rated season of the series averaging 3.1 million total viewers, season three is recording double-digit growth with an 11 percent increase among total viewers compared to the previous season.

The network's historic second quarter was fueled by rating milestones including season four of "The Real Housewives of New York City" which is averaging 2.65 million total viewers, marking a ten percent increase versus the prior season, and season three of "Top Chef Masters" which earned 1.7 million total viewers, up seven percent from season two. "The Real Housewives of Orange County" earned its highest rated season of the series ever among all key demos with 2.6 million total viewers and 1.9 million adults 18-49. The season six finale (6/5/11) delivered its highest rated episode of the series among all key demos and marked the first time the series earned more than 3.5 million total viewers and 2.5 million adults 18-49. Season four of "Watch What Happens: Live" is averaging an impressive 1.5 million total viewers and 975,000 adults 18-49 to-date, up 11 percent among both total viewers and adults 18-49 compared to the previous season.

Though often seen with a different girl on his arm, Matt is intrigued by the possibilities of an old fling, Neill Sklyer, who moves back to the city. His best friend, Courtney Kerr, calls herself Matt's "gatekeeper" and definitely voices her disapproval of the women Matt surrounds himself with.


Courtney Kerr: An outspoken Southern Belle, Courtney's keen fashion sense reflects her personality: fun, vibrant and unique. She enjoys working closely with Dallas-based jewelry designer and regularly attends fashion shows, claiming fashion is her drug. Courtney is determined to find true love, though her best friend, Matt Nordgren, is convinced that her standards are too high and unrealistic. She claims to have only platonic feelings for Matt, but is always quick to dismiss the women in his life.


Glenn Pakulak: A punter for the Oakland Raiders, Glenn has been enjoying the distractions in Dallas while waiting to see if the NFL lockout will be lifted. A guy's guy with an unusually keen fashion sense, he energetically throws himself into everything he does. After ending a four-year relationship that couldn't survive the long distance, Glenn has realized that he's nowhere near ready to settle down. His effortless charm wins the ladies over; however his "two-date maximum" prevents anyone from getting too close. When the ex -girlfriend comes into town, Glenn is reminded of the good that came with being in a relationship and will have to decide if he should stick with the single life or rekindle a past romance.

Drew Ginsburg: Drew speaks his mind and wears his heart on his sleeve. A proud gay man, he prefers cars to couture. Drew works in the family business, which owns Boardwalk Auto Group and controls 10 car dealerships throughout the Dallas/Forth Worth area and in San Francisco. Over the past nine years, Drew has been on a remarkable weight loss journey, losing over 200 pounds. Tired of unfulfilling flings and short-lived relationships, Drew is determined to settle down and start a family. Drew also deals with unresolved feelings for an ex boyfriend and in order to move on, must resolve if there is anything left between the two.

Tara Harper: With her bright blonde hair and curvaceous figure, Tara is the quintessential Dallas girl. She has gained financial independence as the Executive Vice President of Sales for her family's manufacturing company, however, her real passion is her charity. Tara has called off four engagements in the past, but hasn't given up the hope that her soul mate is still out there. Tara has a long list of rules about dating, which may contribute to her difficulty in finding the right guy. With a pattern of jumping from one relationship to the next, Tara is planning to be single a while, but finds that she has to reconsider when a friend becomes something more.

Neill Skylar: After moving away at the young age of 18 to support herself as a musician and actress in Los Angeles and New York City, Neill has returned to her hometown. She is quickly re-acclimating to Dallas, while embracing her most important role as a new mom. The singer/songwriter is working hard to gain recognition for her new band. She lives with her 1-year old son and believes that one can still have fun and be a hot mama. Neill is trying to find her place in Dallas with the help of long-time friend, Matt Nordgren. Though Neill and Matt both say they aren't looking for something serious, the two can't deny their chemistry.

Press Release: Santa Monica, CA - From Ashton Kutcher's Geisha House to Robert DeNiro's Ago, attaching a celebrity's name to a restaurant is definitely a growing trend in Hollywood.... but is it always a recipe for success? VH1 is going to put the concept to the test by partnering with renowned restaurateurs, The Dolce Group, to give seven celebrities the chance to turn one of their West Hollywood, CA properties into a flourishing and fully-operating restaurant. Joining the cast is Heidi Montag ("The Hills"), who not only has a passion for food, but also knows a thing or two about the restaurant business, especially after dealing with the unfortunate demise of her parent's restaurant. Academy Award-Winning artists, DJ Paul and Juicy "J" (from rap group Three 6 Mafia), who both have experience in the kitchen and have dreams of hosting a cooking show, will finally be given the opportunity to bring their culinary expertise to the table. Working with them, a cast of food connoisseurs in their own right, Danielle Staub ("Real Housewives of New Jersey"), Jake Pavelka ("The Bachelor"), Ashley Dupre (Singer) and Vincent Pastore ("The Sopranos") have always had the desire to pursue their visions and conquer the restaurant world. For eight weeks, this colorful crew of celebrities will roll up their sleeves and work together to launch their own restaurant, aptly named, Famous Food. This new one-hour, ten episode series is set to premiere Sunday, July 10 at 10PM*.

Mike Malin and Lonnie Moore are the founding members of The Dolce Group and they define what it takes to open a successful celebrity restaurant. Some of their well-known Hollywood establishments include Ketchup, Angels & Kings, Geisha House, Ten Pin Alley, rare 120, Wonderland and Dolce. Over the course of the series, Mike and Lonnie will provide the cast with a variety of tasks that need to be completed in order to get the restaurant off the ground. The cast will be tackling such duties as renovating the space, agreeing on a restaurant concept, creating marketing plans, crafting a menu, hiring the staff and eventually, ensuring a flawless grand-opening. Every week it will be up to the team to work together and complete their list of tasks, while Mike and Lonnie review their progress. The season will conclude with the finale episode featuring the grand opening of one lucky restaurateur's dream restaurant open for business and ready for the public's review.

After the restaurant's grand opening, Mike and Lonnie will assess the celebrities' individual achievements (and failures). Whoever they deem the most deserving, will ultimately be awarded a partnership stake in the restaurant. In the end, only the most valuable star will come out on the top while the rest will leave with nothing.

Can these celebrities work together to turn Famous Food into a thriving Hollywood hot-spot or will they be left with nothing but bad reviews? Watch it all unfold when "Famous Food" premieres on VH1 Sunday, July 10 at 10PM*.
